Morning Glory muffins

When your stomachs full, your heart is too.

Yesterday I baked up a storm.  I started the day with these Morning Glory muffins.

But I made a couple changes to the recipe.  I added a teaspoon of cinnamon, and I didn't have nutmeg so I used a little clover instead and I think the resulting flavour was just as amazing.  I also didn't have raisins but I did have some dried cranberries, so into the batter they went!  I shredded 2 Macintosh apples and threw 'em in there, and I mashed up 2 bananas instead of 1.  To top it off I added a hint of vanilla.

They took about 30 minutes in the oven at 400°, and I allowed them to cool for about 20 minutes in the muffin pan before I plated them.  They were definitely worth the wait! 


My better half loves them!  They are a great breakfast muffin.  It's the perfect way to make sure we get some fruit in our tummies every day.  I'm going to have to make more soon!

PS: Store in the fridge to help them last longer. I had 4 muffins go to waste because they rotted on my counter-top in a container after being out for 3 days.

Taking care of Mama Bear!

So, it's been a while--my bad peeps!!!  Maverick has been growing sooo quickly and the weather is finally warming up here in Alberta (somewhat, we still have snow but meh that's just Canada eh!) So we've been heading outside for daily walks which has been aahh-mazing for my mental and physical health!  During my pregnancy I went for regular walks (just not on those days late in my 3rd trimester when my body & especially feet ached so badly that walking was pretty much unbearable), but it was kinda challenging to get back into the groove of things post-partum.  Now that lil Mav is four months old I really am starting to feel like myself again (or even better, if that's even possible!!) During my pregnancy I gained about 70 lbs  (whheeew! Lol!) But I did lose 30 right after birth.  I haven't stepped on the scale in a lil while, because it's results were rather discouraging lol, so I've just been feelin' myself and all my lovely motherhood curves...

Battling baby rashes

Newborns don't always have the picture-perfect skin we all dream about.  Babies get acne, heat rashes, eczema, diaper rash, the list goes on. As a new parent, every time I caught sight of a rash it kind of sent me into a panic, unintentionally of course.  I think it has to do with that new mama anxiety, y'know.  So let's talk about that first time (and only time... so far...) that Maverick had diaper rash.  He was 10 weeks old, and we had just used Pampers sensitive baby wipes because we ran out of our usual brand (Kirklands).  To this day I still like to blame the change in wipes as the cause, but I'm sure it was a variety of things.  Babies can get diaper rash, or nappy rash, from wearing a soiled diaper too long, from the chemicals in diapers (and wipes), and simply from not airing out their bums enough.   When Mavi had the rash I read every online source made available to me with no prevail.  This was one stubborn bout of nappy ra...
