Yesterday I baked up a storm. I started the day with these Morning Glory muffins.
But I made a couple changes to the recipe. I added a teaspoon of cinnamon, and I didn't have nutmeg so I used a little clover instead and I think the resulting flavour was just as amazing. I also didn't have raisins but I did have some dried cranberries, so into the batter they went! I shredded 2 Macintosh apples and threw 'em in there, and I mashed up 2 bananas instead of 1. To top it off I added a hint of vanilla.
They took about 30 minutes in the oven at 400°, and I allowed them to cool for about 20 minutes in the muffin pan before I plated them. They were definitely worth the wait!

My better half loves them! They are a great breakfast muffin. It's the perfect way to make sure we get some fruit in our tummies every day. I'm going to have to make more soon!

PS: Store in the fridge to help them last longer. I had 4 muffins go to waste because they rotted on my counter-top in a container after being out for 3 days.
