Nothing makes the house smell better than baking apple pie, amirite?!
So everyone on FaceBook was sharing and tagging me in these fun & easy looking Apple Pies, made using an ice cube tray. Well, my friends, these cute little apple pies made using an ice cube tray were neither fun nor easy.
They were a pain in my freakin' ass (pardon my French). Let's start at the beginning. I read the comments and noticed everyone saying they stuck to the tray. Not a problem, I used a little vegetable oil and spread it around each tray using a piece of paper towel.
Onto the dough: I didn't have ready-made dough on hand but I had flour, margarine, and water so I used 3 Cups of All-Purpose flour, 1 cup of margarine, and about 9 tablespoons of cold water. After cutting my margarine into the flour using a fork I had the usual "coarse meal" appearance, all the while thinking to myself "what the heck is coarse meal and what does it look like anyway?" Hmmm... Then I used my dough hook to mix in the water, adding it gradually. After a couple minutes with the dough hook I kneaded it with my hands and split it into two balls. The dough was in great shape and I was super proud of myself.
Okay, so I rolled out the dough and placed over two ice cube trays, pressing down in each well. I put the apple mixture in and found 1/2 tsp was such a small amount I doubted I'd even be able to taste any apples when they were done. So I added a little more of the apple mixture.
Even after upping the amount of apple mixture I added to these, I still had over half left over when all was said and done. I mean, the apple mixture tastes delish but what am I gonna do with half a big bowl of apples and cinnamon?
So, back to the disaster of these ice cube apple pies... adding more of the apples resulted in the dough not sealing properly once I was cutting them out on the cutting board. Uuugghhh!! So I used a fork to seal each one, and kind of felt like I was making perogies.
I put the first batch in the oven at 375°F and after 20 minutes they were terribly burnt:
I'm sure you can imagine my frustration levels at this point. But I was determined to make a beautiful fricken dessert. I was not letting all these apples & dough go to waste!
So with the second batch I baked at 350°F for 15 minutes and the bottoms were golden brown but the tops were still very light. I dusted them with some cinnamon for colour and I was pretty satisfied with the result:
My hubby said I could have added more of the apple mixture, and I totally agreed that there were not enough apples in these. So I decided next time, I'm just making apple pie.
